Layered Soybean Salad

A re-vision of an old pot-luck standby, this layered soybean salad is beautiful and nutritious. Serve it in a glass bowl to show off the colors. The ingredient amounts will vary according to how many you're serving and the size of your bowl--use whatever amounts look good!

Ingredients

boiled and sliced red salad potatoes blanched broccoli florets (To blanch broccoli florets, boil them for 1 minute in water to cover, then drain immediately.)

shredded red cabbage cooked soybeans chopped Romaine lettuce a thin layer of Nayonaise dressing sunflower seeds

Arrange the ingredients in layers in the order listed above. Do not toss. Chill thoroughly before serving.
